The farming is biodynamic, and the cuve is produced using indigenous yeasts, fortified with a bit of vin de paille. No dosage nor sulfur is added. The wine is rich with notes of toasted brioche, brown butter and lemon zest; it's perfect as an aperitif but is bold enough to stand up to a meal.
